    Tradition on a plate

    History, art and food are the cornerstones of Florence, and foodies of all types are sure to be profoundly impressed by the city's culinary offering. Tuscan cuisine covers all the bases, from succulent meats to cereal-based soups, via full-flavoured cheeses, seasonal vegetables and delicious desserts. The recipes for many of the typical dishes have remained intact over the years, and for this reason are based on simple, rural ingredients, always accompanied by wonderful Tuscan olive oil, world-renowned wines and characteristic pane sciocco (unsalted bread).
    Our menus feature a wide range of typically Tuscan dishes, often revisited in a modern style – such as pappa al pomodoro (bread and tomato soup), ribollita (bread and vegetable soup) or the various starters – but are always based on traditional ingredients.

    Thanks to the menus put together by our chef, Samuele Melani, which range from pure Tuscan specialities to more modern Italian fare, you can choose from an array of culinary experiences, all brought together by the intuitive use of simple, authentic ingredients.


    Whatever you decide to eat, you are sure to be won over by the enchanting surroundings, the evocations of the Tuscan culinary tradition and the impeccable service, meticulously co-ordinated by the Maître d', Andrea Tempestini, who has built up an unrivalled breadth of knowledge about wine and who can recommend the best bottle to exalt the flavours and aromas of your chosen dishes.

    Samuele Melani

    Hailing originally from Tuscany, Samuele worked in kitchens all over Italy before coming home with a commitment to make the most of the flavours and aromas of the local produce.
    Our chef’s output is a perfect marriage of tradition and experimentation, and he is sure to dazzle you with various Tuscan dishes re-cast in an original way, alongside dishes from the wider Italian repertoire, all made using fresh ingredients of the highest quality.
    Moreover, Chef Melani runs individual and group cooking classes, on which he teaches adults and children the secrets of the dishes of the Italian tradition, taking in everything from pasta, through meat and fish, all the way to desserts.

    Our wonderful, classically styled Bar Bibendum, situated right in the centre of Florence, is the ideal place in which to relax after a tiring day out shopping or visiting the city's numerous museums.
    For years, the Bar has been a favourite haunt of Florentine society, attracted by the elegant surroundings and the allure of the hotel, complete with its crystal chandeliers, baroque mirrors, Art Nouveau wall lamps and a very warm colour scheme that creates a refined yet informal ambience.
    While everything is relaxed and convivial, our barmen are hard at work creating cocktails mixed with the greatest of care to delight the palates of the exacting clientele.
